Roasted Rainbow Carrots with Sumac Spices
- 2 bunches rainbow carrots (small to medium, if larger, halve lengthwise)
- 1 tsp kosher or flaky sea salt
- 1 tsp sumac
- ½ tsp ground cumin
- ½ tsp ground coriander
- 2 bay leaves
- 1 ½ Tbsp olive oil
Preheat oven to 400 F
Peel carrots and place in a shallow baking pan in a single layer.
Mix remaining ingredients together in a small bowl.
Pour mixture over carrots and toss a few times to make sure all carrots are covered.
Roast uncovered for 25 - 30 minutes, or until tender. Transfer to a serving dish and serve immediately.
