Roasted Rainbow Carrots with Sumac Spices

Serves 4-6

  • 2 bunches rainbow carrots (small to medium, if larger, halve lengthwise)
  • 1 tsp kosher or flaky sea salt
  • 1 tsp sumac
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 2  bay leaves
  • 1 ½  Tbsp olive oil
  1. Preheat oven to 400 F

  2. Peel carrots and place in a shallow baking pan in a single layer.

  3. Mix remaining ingredients together in a small bowl.

  4. Pour mixture over carrots and toss a few times to make sure all carrots are covered.

  5. Roast uncovered for 25 - 30 minutes, or until tender. Transfer to a serving dish and serve immediately.
